In an ideal world, complete and accurate food consumption survey data would be available, compiled with full information at the individual eating event level. For every food specified in an eating event, the food brand and packaging type would also be specified. For each food brand, information would be available on concentration levels of all possible pesticides, residues, additives and nutrients. For any type of food packaging, we would have accurate information on migrated amounts of all chemicals of interest between the packaging and the food.
If this type of data was available for your region of interest, exposure assessment specialists would not be needed. It would simply be a matter of adding up the amounts of each chemical of interest appearing in the survey, and obtaining a population exposure distribution. Unfortunately, we don't live in an ideal world and we are rarely ever faced with ideal information.

Food safety and exposure assessment is not all about
pesticides, contaminants and artificial flavourings
and sweeteners. There are other less obvious food
ingredients that need to be carefully analysed in
terms of the consumption levels of the population.
The Food Safety Authority of Ireland (FSAI) recently
signed up to a 5 year licence for CREMe Food Safety because
the software provides an easily accessible and
comprehensive means of conducting probabilistic risk
assessments on hazards associated with foods. Using
CREMe expertise and software the FSAI were able to
set up and analyse data to gauge the impact of salt
reductions in foods on the overall salt intake of
the Irish population.
